As an example, imagine a scene in a film requires an aeroplane flying through the air, in a traditional 5.1 or 7.1 setup the sound of the aeroplane would be assigned to specific channels and then mixed with other sounds. The aeroplane would be able to switch across channels, but the sound would not able to go above you. This means that you would only hear the sound from the predetermined locations in the speaker setup, and not as you would in real life.
